Pomegranate, Orange and Basil Salad

Some days back in Bangalore there was heavy rain. It had rained heavily in the night and had stopped by morning. As usual i got up and opened my door to take the milk packets. It has just stopped raining. When i came near the gate to take the milk packets, i looked out and everything around me  looked so fresh and clean.  The trees, small garden in front of my house, my terrace garden looked even more green and sparkling. Then i took out my little gadget (camera ) and shot some pictures. When i was   coming down from my terrace i saw some little boys playing and enjoying in their own way. They saw me clicking photos of them, they invited their other little friends and wanted me to click the photos of all.


    One of the boy in that group went somewhere and he came with pomegranates and started running towards his place. I stopped him and asked i need to click some photos and so just hold them in your hands. Just after the click he immediately ran away, don't why, may be he thought i might ask some share :)

   Now coming to today's recipe, i prepared a salad with pomegranate and orange. A vibrant,  colourful, crisp and  yummy salad recipe which is rich in antioxidants and vitamin C. Just need a few minutes to prepare this.
Pomegranate,Orange, basil Salad

  • 1 Pomegranate
  • 1 Orange
  • Few Basil Leaves
For Dressing
  • 1/2 tbsp Honey
  • 1 tbsp Orange Juice
  • 1/4 tsp Olive oil
  • a pinch of salt
  1. Prepare the dressing by placing all the ingredients in a bowl and slightly whisk. Set aside while you prepare the salad.
  2. Cut the pomegranate and take the seeds out and keep aside.
  3. Peel orange and remove the white pith and keep the flesh aside.
  4. Place the fruits, basil leaves in a large bowl and pour 3/4 th of the dressing and give a gentle mix.
  5. Spread them on a platter and pour remaining dressing over it and serve.

If you don't have bail leaves, substitute mint leaves instead.
You can prepare your own dressing for this salad. For example mix salt, pepper, lime juice and make a spicy dressing if you like.
